Cooked up a meal with on hand supplies. The steak was frozen and thawed, still red yet not fresh, so didn’t get the elasticity I wanted to render, it came out more lean like a sirloin, it was a combo of over using butter, post frozen (dethawed normal), and leaner cut out of the batch. Overall a good meal, steak could’ve been improved slightly with grilling no reverse sear, sear and indirect offset would be my preference, post thought.
